Step 2 - Customize your Cow

Here are some things to consider when deciding between a Custom or Standard Cut Cow...
  • There is an additional fee of $150 to submit a Custom Cut list

  • A Standard Cut (no cost) is designed for maximum yield of the beef carcass.

  • Each cut is individually packaged (one steak per bag, one roast per bag, etc.) in a vacuumed sealed bag that is labeled and weighed.
There are twelve sections to each Cow that can be customized (plus the offal / bones) listed below:
  1. Chuck - consisting of chuck steaks, chuck roasts and flank ribs

  2. Rib - where boneless ribeye, rib steaks and prime rib roasts come from

  3. Short Loin - where New York steaks are cut, either bone in or boneless

  4. Sirloin - sirloin can be made with into steaks, roasts or kabab and stew meat

  5. Tenderloin - usually made into filet mignon steaks, or tenderloin roasts

  6. Top Sirloin - steaks, roast or stew and kabab meat

  7. Bottom Sirloin - steaks, roast or stew and kabab meat

  8. Round often made into additional ground, roasts or stew and kabab meat

  9. Brisket - cut into large roasts for smoking or corned beef

  10. Plate - traditionally made into short ribs

  11. Flank - great for carne asada

  12. Shank - often made into osso-buco and marrow bone soups

  13. Bones and Offal - optional items for making soups, tallow (fat) and organ meat dishes

5 of 5 great flavor and easy cooking November 24, 2021
Reviewer: Holly from Carlsbad, CA United States
The best way to cook the beef is to use grill/air frier  for steaks and to use stove top/oven to slow cook other tougher cuts (brisket, roast etc). No species, just add a bit of salt if needed. It is the most flavorful beef and soup I ever had.  Initially, I used traditional recipes with a lot of species, and I didn't really taste the difference of this beef with the grocery store stuff. Then I started to cook the beef with no species and no salt, so I can share it with my dog, wow, it has a very intense flavor with a tender texture. Now I understand that those complex recipes with tons of species and vegetables are intended to give flavors to the tasteless mass-produced beef, but will mask the true beefy flavor of those grass fed beef. Best taste ever and will always buy. Thanks for the great treat.
